Sea Greens
Seaweeds collectively get a bad rap, being seen as slippery to negotiate on rocky shorelines, and slimy in texture. We prefer to focus on their culinary and health benefits and call them ‘Sea Greens’.
When selectively sourced from the wild in small quantities, carefully washed, dried and cut to size, and lovingly prepared and incorporated into innovative recipes, they can be delicious highlights and savoury seasoning. Kelps, kombu, dulse, wracks, laver, and more… the list is long. The Japanese, of course, love their nori-wrapped sushi rolls, kombu, wakame (seaweed salad), umami flavour, and dashi; they have a long tradition of seaweed cultivation, eating, and healthy, balanced living from foods of the sea. Seaweeds, after all, in every manifestation and preparation, are rich in vitamins like A, B, C, and D; minerals (especially calcium, iodine, copper, iron, magnesium, potassium, zinc, and dozens more present in smaller quantities); other nutrients including antioxidants, complex polysaccharides, alginates, fibre, vegetable protein, and beneficial bioactive peptides that may help to reduce high blood pressure and prevent cardiovascular disease.
We offer all sea greens dried and flaked; sugar kelp and kombu come also dried and cut into sheets, packaged for easy rehydration, to be chopped into salads or added to main dishes as main ingredient or seasoning.
To ensure maximum freshness and nutritional value, all our sea greens are harvested seasonally by hand at various locations from pure waters on our wild eastern Cape Breton shore at low tide by cutting from live plants so that healthy re-growth can occur. Small batch harvests are rinsed in fresh water to remove debris and excess salt, hung to dry in the sun and wind, then dehumidified under climate-controlled storage conditions, before being prepared for sale.
Sea Salts
We have chosen a selection of rainbow colours with a great range of flavours from sea-y to herb-y to citrus-y to hot and spicy. The sea salts are offered coarse or fine; they are hand-harvested from sea shores east across the North Atlantic in Brittany and blended with dried kelp, herbs, fruits, and spices. Choose your salt and sprinkle freely, as a seasoning in cooking or as a condiment in your grinder or shaker.
These salts are rich in essential minerals, predominantly calcium, potassium, and magnesium salts of chloride and sulphate. They also contain numerous trace elements, existing in minute concentrations but working with other minerals to maintain optimal function in your body. Trace minerals you may find in sea salt include phosphorus, bromine, boron, zinc, iron, manganese, copper and silicon. Your body uses some of these minerals, such as iron and zinc, to make enzymes involved in metabolism. Although phosphorus typically occurs in trace amounts in sea salt, it is actually an essential macro-mineral. Your body uses it as a structural component of bones, teeth and cell membranes, as well as for energy production.
Grey sel gris sea salts are hand-harvested from pristine Brittany (Bretagne) Atlantic seawater and dried in clay pans. These delicious sea salts are unrefined so they retain more of the trace minerals that naturally occur in seawater. They are harvested using traditional methods. This prized process is done entirely by hand, using only wooden tools. This preserves the pure taste of the salt and produces a very special moist crystalline texture. Naturally-flavoured North Atlantic sea salts from Brittany are ideal for use as seasoning for soups and broths, on salads, cooked fresh vegetables, grilled fish, and grilled meat. They are available in coarse grain (ideal for pinching or salt cellars) and ground fine (an ideal mineral-rich replacement for processed table salts).
Sea Teas
Using one type of sea green (bladderwrack, dulse, or kelp) as base, our sea teas are a subtle blend of ingredients making up a brew that is invigorating, soothing, refreshing, or medicinal.
Wild Berries
All our berries undergo the arduous process of wild-harvesting by hand from hillsides and headlands along our eastern Cape Breton Island coast. They chose this place and took root here long ago in their natural habitat; they are not planted and farmed and mechanically harvested.
They are all high in antioxidants, fibre, vitamin C and vitamin K, but low in calories. Because wild blueberries, crowberries and cranberries are high in antioxidants, they can neutralize some of the free radicals that can damage DNA.
Ever since we moved to live on the east coast of Cape Breton Island last April, locals have confounded us by asking: " Now why would you want to move here?" The answer is simple, and we just point to the open North Atlantic and say "To be on the ocean".
Oceanside Wild, as the name suggests, sits perched on a knoll looking out over a picture-perfect maritime bay to a foghorn and two rocky headlands that protect the cove of Little Lorraine. Beyond lies the open ocean. Facing south as we do, the nearest landfall as we look out is Venezuela. Due east is Bordeaux in France.
The trails snaking out around the cove and along the coast wind through low spruce woods and along open taiga habitat carpeted with crowberries and blueberries, mosses and lichens. Seaweeds of many varieties, shapes, and sizes wash up, storm-tossed on the multi-hued rock and sand beaches. At low tide, we scour through the exposed strands of kelp and kombu, wracks and dulse, harvesting small amounts by hand, being sure to leave each plant base intact on its holdfast to grow back again.
This wild east coast of Cape Breton runs from Arichat in the south to Glace Bay in the north, washed by the waves and winds, storms and tides off the vast ocean, tickled by warm summer breezes and pounded by icy winter surf.
We have registered our land and surrounding natural shoreline and coastline as an ARK, practising Acts of Restorative Kindness through www.wearetheark.org, founded by the visionary Mary Reynolds in Ireland. We are the first such Ark on Cape Breton Island, and in Nova Scotia.
And so - from the sale of our organic farm in the hills of southern Ontario - it was only natural that we - farmer Pete and glass artist Gundi ( www.gundi.com ) - would find our home and new calling at Oceanside Wild.
With all manner of sea greens from our nearby shores to harvest and dry; teas to be blended from these sea greens; wild berries from the hillsides to be picked; greens and herbs from raised beds to be (organically) grown, it is time to get busy.
